Eating large amounts of soy may reduce the risk of developing a breathing problem known as chronic obstructive pulmonary disease (COPD), researchers report. In an article published in the journal Respiratory Research, scientists at the Curtin University of Technology (Australia) noted that smoking is the major risk factor for COPD while “diet and environmental exposure to protect the development of the disease , said Dr. Andy Lee, team coordinator.
The researchers studied 278 patients with COPD and 340 volunteers without the disease. The latter ate more soy per day than the first. Similar declines in the risk of COPD was recorded with a higher intake of tofu and bean sprouts.
